Kacie's Caramel Corn!

Here's the recipe I made for all the Berrett ladies for Christmas this year! It's super fast and super yummy!


Ingredients:
2 2/3 cups of brown sugar
1 stick of butter
1 cup of Karo light corn syrup
1 can of condensed milk
1 tsp of vanilla
4 bags of popped popcorn

Bring the brown sugar, butter and Karo corn syrup to boil. Stir occasionally. Reduce heat to medium then add the condensed milk and tsp of vanilla.
Pour over popcorn!

Kimi's Artichoke Dip

Recipes in use...

The recipe exchange was a blast!  We missed those of you who couldn't make it...there is always next time!  Just wanted to let everyone know that I have been using your recipes and LOVING them!  Thank you Erin for your Worcestershire Chicken recipe, it was a big hit.  Thank you Aunt Lorene for the Cesar dressing recipe, we loved it!  I plan on making Kari's recipe she posted on here tonight...wish me luck!

Baked Chicken Taquitos

Recipe From Kari....that's right first post!!

These baked taquitos are one of my family's favorite dinners!  They're easy to make and taste just as good reheated (in the oven, of course) on the 2nd day....I hope you enjoy!!

4 oz. cream cheese
1/4 C. green salsa
1 Tbsp. lime juice
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp.onion powder
1/4 tsp. garlic powder
3 Tbsp. chopped cilantro
1 green onion sliced finely
2 C. shredded, cooked chicken (when I'm in a hurry I'll use canned chicken!)
1 C. grated Monterey Jack cheese
Small yellow or white corn tortillas
Kosher salt

Heat oven to 425.  Line a baking sheet with foil and spray lightly with cooking spray.
Mix softened cream cheese, green salsa, lime juice, cumin, chili powder, onion powder and garlic powder.    Then add cilantro, green onions, chicken and cheese and combine well.  Working with a few tortillas at a time, place 3 to 4 between 2 damp paper towels and microwave for 30 to 45 seconds, until tortillas are soft and pliable.  Place 2 to 3 tablespoons of chicken mixture on tortilla and roll up as tight as you can, keeping it about 1/2 inch from top and bottom edge.

Place filled taquitos seam side down on baking sheet (don't let them touch), spray lightly with cooking spray then sprinkle with Kosher salt.  Bake in oven for 15 to 20 minutes or until crisp and golden brown. 

Serve with sour cream, guacamole, salsa, ranch....or whatever your heart desires....then enjoy!!!
